Okroshka – Cold Radish Soup (or Salad)

This Russian dish – a cold soup called Okroshka “the chopped one” – was submitted by CSA member Julia.  The Rogowski Family also makes a similar Polish recipe for a holiday salad that uses the same ingredients, swapping the 2 cups of Kefir for 1 cup of Sour Cream.
Ingredients:
3-4 medium potatoes, unpeeled (unless preferred)
4 eggs
1/2 pound of chicken, or ham if preferred
1 cup fresh or frozen sweet peas
1 bunch of radishes
1 bunch of dill
2-3 medium cucumbers, peel if preferred
2 cups plain kefir (or buttermilk)

Directions
Boil potatoes, peas, chicken and eggs separately – until cooked.
Cut all ingredients into a small dice, and finely mince the dill.
Combine in a large serving bowl
Add salt and pepper to taste
Dilute with warm water if a thinner consistency is preferred
The soup is ready!
