2-3 summer squash (zucchini or yellow squash) – sliced 1/4 inch thick
1/4 cup grated Parmesan
1/4 cup Panko (or bread crumbs), plain or italian
Salt and Pepper to taste
1. Preheat oven to 450, prep your baking sheet with cooking spray or use parchment
2. Toss squash with olive oil to lightly coat.
3. Mix parmesan, panko, salt and pepper in a bowl .
4. Press squash into coating mixture on both sides, and place on baking sheet
5. Bake until browned and crisp, 25 to 30 minutes.
