Quelites Quinoa Pilaf

Quelites are a versatile and nutritious green that can be sauteed like Spinach.  Try this easy side dish, or one of our other favorite recipes such as Quelites Dip.

Ingredients:
Onion – 1 medium , small dice
Garlic – 1 clove , minced
Salt and Pepper to taste
Ground Cumin – 1/4 tsp, or to taste
Quinoa – 1 cup (rice or farro can be substituted)
Stock – 2 cups (veggie or chicken)
Quelites – 1/3 pound or 2 big handfuls (wash, remove hard stems, rough chop)
Cherry Tomatoes – 1 cups (or more), chopped

Directions:
Saute Onion & Garlic in a Tablespoon or two of Olive Oil until soft.
Season with salt, pepper and cumin and stir in Quinoa.
Add Stock, Quelites and Tomatoes and bring to a boil.
Reduce to a simmer and cover, cooking for about 25 minutes until Quinoa is soft.
