Kale and Seasonal Fruit Salad

Ingredients: (3-4 servings)
1 Bunch of Kale
1 Tablespoon Fresh Lemon Juice
Dash of Kosher Salt
1 Cup Seasonal Fruit: suggest Strawberries, Blueberries or Peaches
1 Cup Seeds or Nuts: suggest Sunflower seeds or Slivered Almonds

Dressing:
1/4 cup Extra Virgin Olive Oil
1/8 cup Fresh Squeezed Lemon Juice
1 Tablespoon Honey
Salt & Pepper to taste

Directions:
Remove hard stems from Kale, stack leaves, and slice into thin ribbons
Add lemon juice and salt to Kale. Toss well, let sit for several minutes.
Whisk together dressing. Add Fruit to Kale, pour dressing over top.
Marinate 20 minutes so the dressing softens the kale, stirring occasionally.
Serve with a topping of Seeds or Nuts of your choice.

Savory Style:  Swap out the Fruit/Nuts for Garbanzo Beans and Shredded Carrot.  Use our Garlic Scape Dressing recipe instead of the honey sweetened dressing above.  Sprinkle with Parmesan and Croutons.
