Garlic Scape Salad Dressing

This light green garlicky dressing is an early summer treat.  Enjoy those garlic scapes while you can!  They are also terrific grilled, sauteed in pasta, or made into a pesto.

Ingredients:  (enough to dress a salad for two people)
1 Garlic Scape – rough chopped
4 Tablespoons Extra Virgin Olive Oil
2 Tablespoons White Wine Vinegar (or vinegar of your choice)
1 teaspoon of Dijon Mustard

Puree all ingredients together using a stick blender in a small container.
Or you can use a regular blender or small food processor.
Add salt and fresh cracked pepper to taste.
Taste and adjust any of the ingredients to your own preferences.
