Ingredients: (enough to dress a salad for two people)
1 Garlic Scape – rough chopped
4 Tablespoons Extra Virgin Olive Oil
2 Tablespoons White Wine Vinegar (or vinegar of your choice)
1 teaspoon of Dijon Mustard
Puree all ingredients together using a stick blender in a small container.
Or you can use a regular blender or small food processor.
Add salt and fresh cracked pepper to taste.
Taste and adjust any of the ingredients to your own preferences.
