Curried Mustard Greens with Chickpeas

Recipe by CSA Member Lori Marrie

1 Tbs olive oil
1/3 cup of vegetable broth
1 yellow onion, chopped
2 cloves garlic, chopped
3/4 tsp curry powder
1/4 tsp turmeric
1 bunch mustard greens, remove stems, chop
2 tomatoes, chopped
1 1/2 cup cooked chickpeas
salt & pepper to taste

Directions:  Heat olive oil and 2 tablespoons of broth in large skillet. Add onions and cook on low heat 5 minutes or until translucent. Add garlic, curry, turmeric and broth.
Mix well. Add mustard greens.  Cook until greens are tender, about 8 minutes. Add tomatoes and chickpeas. Cook 10 minutes, taste and adjust seasonings.
