This was posted earlier in a group of radish recipes. Given the amazing Snow Peas we’ve been harvesting lately we thought it was worth re-posting this no-cook recipe.
1-2 large Rogowski Scallions (or 3-4 store bought), sliced thin
4-8 Radishes, sliced thin (or use Kohlrabi, Jicama, or Cabbage)
8 ounces thinly sliced snow peas
4 teaspoons rice vinegar
1/2 teaspoon dijon mustard
1/2 teaspoon sugar
2 tablespoons olive oil
1/2 teaspoon sesame oil
Whisk together Dressing Ingredients and pour over sliced veggies.
Add salt and pepper to taste.
Serve chilled or at room temperature.
