Sweet Mint Dessert Pesto

Use this sweet pesto to drizzle over ice cream, fold into brownie batter, or to top fresh cut or grilled fruit for a lovely dessert.

Ingredients:  (Yields 1 Cup)
1/2 cup Sugar
1/2 cup Water
2 cups packed Mint leaves
1/2 cup slivered almonds
1 Tbs Honey
Pinch of Salt, to taste

1. Combine sugar and water in a small saucepan, heating until sugar just dissolves.  No need to actually bring to a boil.  Set aside to cool.  Makes about 3/4 cup of simple syrup
2. In a food processor combine mint and almonds until finely chopped
3. Drizzle in syrup and honey until a paste forms, add water if a thinner consistency is desired.
4. Stores in fridge for 3 days, or freeze for 3 months

Variation 1:  Swap the simple syrup for 1/2 cup of Orange Juice, and add some Orange or Lemon zest to taste.  You may want to increase the amount of Honey after tasting.
Variation 2:  Instead of all Mint, try a combination of 3/4 Mint and 1/4 Basil leaves.
