Roasted Garlic Scapes

Garlic Scapes can be served as a side or mix in with your main dish, they taste like roasted garlic but creamier.

1. Take the scapes and put them in a lightly oiled roasting pan, top with salt (kosher or sea salt works best but any will do).
2. Place the pan in a hot (425 °F) oven for 30 to 45 minutes or until they are
beginning to turn brown.
3. Instead of roasting the garlic scapes you can also grill them and then drizzle the cooked scapes with balsamic vinegar for a great summer dish.
