This dessert is a tart and colorful alternative to the usual baked apple desserts. The bright red of the cranberries will get you in the mood for Thanksgiving!
Ingredients: (serves 4)
1/3 cup orange juice
1 cup white sugar
3 cups fresh cranberries
2 large apples – peeled, cored, and chopped
1/3 cup chopped nuts of your choice (pecans, almonds, etc.)
1/2 cup brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/1 cup rolled oats
zest from 1/2 an orange (optional)
3 tablespoons butter, softened
1. Combine juice, sugar, and half the cranberries in a saucepan. Bring to a boil and then simmer until the cranberries pop, stirring occasionally (8-10 mins). Remove from heat.
2. Mix in the apples and the rest of the cranberries. Allow to cool a bit, then pour into a greased 6×6 baking dish.
4. Combine all topping ingredients thoroughly and sprinkle over the fruit mixture.
5. Bake at 350 for 45 minutes, until filling bubbles and oat topping browns. Or let it cook another 5-10 minutes if you prefer the apples a bit softer.
