This sauce can be used to marinate any type of meat, chicken, shrimp or tofu prior to grilling. Or it can be used as a sauce after grilling.
2 cups cilantro leaves and tender stems
1/4 cup vegetable oil
1/2 jalapeno pepper, remove seeds for less heat
1 Tsp fresh ginger, rough chopped
Juice from 1/2 lime
Green tops from 2-3 scallions, rough chopped.
Kosher salt and ground pepper to taste
- In a food processor combine cilantro, oil, jalapeno, ginger, lime juice, and scallion greens
- Blend until smooth
- Taste and season with salt and pepper
- Keep refrigerated until ready to use
