Wild Amaranth Quiche

One Pie Crust – your favorite recipe, or storebought.
4 cups wild amaranth leaves, chopped
1 Small Onion, chopped
2 Tbsp butter
1 Tbs flour
½ Tsp salt
3 eggs
1 ½ cups milk
2 cups (8 oz) Swiss cheese, grated

1. ) Prepare the pie crust according to directions.
2.) Saute the wild amaranth and onion in butter until tender (do not to overcook), remove from heat.
3.) Add flour and salt to cooked amaranth and combine.
4.) Whip eggs and milk together, and then add to the amaranth mixture.
5.) Spread cheese over the bottom of the prepared pie crust.
6.) Pour filling over the top of the cheese.
7.) Bake at 325 degrees for 45 minutes. Remove from oven and let it set a few minutes before cutting.
8.) Enjoy hot or cold
