Cocktail: Watermelon Margaritas

Makes 4 servings.  Submitted by staff member Jeanne Fox

Ingredients:
3 cups watermelon pieces – seeded & cut away from rind (optional: Freeze if you have time)
1 Tbs sugar
2 Limes – 1 juiced, 1 saved for wedges.
4 shots of Tequila
2 shots of Orange Liquor (Cointreau, but you can try Grand Marnier or Triple Sec)
1/4 cup Orange Juice
1-2 handfuls of ice
1 Tbs Kosher Salt
1 Tsp Chili Powder (seriously, don’t skip this!)

Directions:
1. Blend watermelon and sugar until smooth
2. Add in lime juice, tequila, orange liquor, orange juice – blend and taste
3. Run a lime wedge around the rims of chilled margarita glasses
4. Combine kosher salt & chili powder in a shallow dish and dip glass rims
5. Add ice to watermelon mixture in the blender and give a final whir
6. Serve immediately with lime wedges
