Verdolaga (Purslane) Pasta Salad

Verdolaga is great raw in a green salad, and can be used with Tempura batter to serve as an appetizer.

Ingredients:
1 pkg rice noodles (about 6 cups cooked)
2 cups of cherry tomatoes halved
2 cups Verdolaga leaves & smaller stems (discard thicker stems)
4 green onions finely chopped

Dressing:
½ cup extra virgin olive oil
¼ cup of rice vinegar
1-1/2 tbsp raw honey
2 cloves of garlic pressed
2 tbsp Dijon mustard
1/3 cup chopped fresh basil
1/3 cup chopped fresh parsley
½ tsp fine grain sea salt
A few turns of fresh ground black pepper

Directions:
In a large bowl mix pasta, tomatoes, Verdolaga, and green onions
In a small bowl combine all dressing ingredients and whisk together
Add dressing to pasta mixture and refrigerate until ready to serve
