* 1 bunch fresh cilantro
* 5 cloves garlic, minced
* 1 tablespoon white wine vinegar
* 1/4 cup grated Parmesan cheese
* 1/2 teaspoon cayenne pepper
* 1/2 cup toasted walnuts (or other nut of your choice)
* salt and pepper to taste
* 1/2 cup olive oil
Put all ingredients in a food processor except olive oil
Start the machine & drizzle in olive oil until the pesto reaches desired consistency.
Some people will saute this pesto briefly before serving over pasta – but we like it raw.
